Shrimp tacos with Mango salsa/pico de gallo

Shrimp tacos is one of my favorite things to eat, especially if they are just spicy enough and just acidic enough. There are so many ways to make this dish and the only thing that can stop you is your imagination. A simple way of eating this is with two of my go to salsas, some greek yoghurt and avocado. Mango salsa brings in a nice sweetness and pico the gallo can substitute your store bought salsa. The shrimps are marinated in a mango sauce i picked up from the store the other day, you can cook them as they are, but i decided to try it out since I'm a fan of hot sauces.


For my salsas i used parsley, even though i know that cilantro is what is supposed to be in a pico de gallo and most common for tacos. I personally can't stand cilantro, so I just swap it with some parsley as it's one of my favorite herbs. But again, this is just based on preference.












 

Shrimp Marinate

- Spicy sauce with mango and passionfruit, 1/2 tsp crushed red chilies, 1 tsp turmeric, 1 tsp ginger, olive oil, salt and pepper.

- put it all into a ziplock bag with the shrimps and let marinate for minimum 15 minutes and max. 1 day.

- Fry shrimps until they turn opaque in a pan.

Mango salsa

- 1/2 mango, 1 lemon, 1/2 onion, parsley. Season with salt, pepper. - Since my mango was a bit unripe and had a tart flavor, i decided to add some agave syrup to get a sweet flavor.



Pico de gallo

- 1 tomato, 1/2 onion, 1 1/2 lemon (adjust to taste), parsley, jalapeno pepper, 1 clove of garlic ( ajdust to taste)

- season with salt and pepper.
